Janet’s appetizer today for our College Football Game-day will be Fried Jalapeno Squash Fritters, with a specially prepared dip made from in similar recipe fashion of the Outback Onion Ring dip.

Fried Jalapeno Squash Fritter Recipe
3 or 4 yellow squash steamed & mashed
1 jalapeno pepper finely chopped
2 eggs beaten
1 roll Ritz crackers crushed
1 medium vidalia onion chopped
1 cup chedder cheese
1/2 tsp prepared minced garlic
mix ingredients together in a med-large bowl

In a large skillet, add 2 Tablespoons of oil, bring to med-high heat
spoon into skillet
Spoon in a Tablespoon of mixture at a time until filling the skillet
fry for approx 3-4 min until brown and crusty
Flip over and fry other side watching close not to burn
Remove with spatula to paper towel to drain.
Serve hot with dip.
Reheat leftovers next day in toaster oven

Blooming Onion Dip
1/2 cup mayo
2 Tb creamy horse radish
2 tsp ketshup
1/4 tsp paprika
1/4 tsp salt
1/4 tsp garlic powder
1/8 tsp dried oregano
1/8 tsp black pepper
dash cayenne pepper

In small bowl, stir together all the ingredients until completely combined.
serve as is, or cover and chill in fridg until ready to serve.
can store in fridg up to 1 week
