Serves: 8-12 dosas (depending on size) | Preparation Time: 15- 20 minutes approx. | Cooking Time: 5 minutes approx.

INGREDIENTS REQUIRED:
– Plain instant oats – ½ cup
– Semolina / rava / sooji – ¼ cup
– Rice flour – ¼ cup
– Fresh yogurt – ¼ cup
– Onions – 1 medium, finely chopped
– Ginger – 1 inch, grated
– Green chillies – 2 to 3, finely chopped
– Fresh grated coconut – 2-3 tablespoons (optional)
– Curry leaves – 6 to 8, chopped up
– Coriander – 2 to 3 tsps, finely chopped
– Cumin seeds – ½ tsp
– Pepper – ½ tsp, freshly crushed
– Salt – 1.5 tsp or to taste
– Water – as required for thinning
– Oil – 3 to 5 tbsp for frying

UTENSILS REQUIRED:
– Mixing bowl
– Whisk
– Chopping board
– Knife
– Flat non-stick frying pan/ dosa pan
– Spatula
– Serving plate
– Mixer Grinder / blender

METHOD
– To start you have to turn your instant oats into Instant Oats flour. Run the oats through a blender and blend till you get a fine powder.
– To this oats flour add the semolina (rava) and the rice flour. Use a whisk to whisk these together. This helps blend the powders together and removes any lumps
– Now you can add the yogurt and water to start thinning the batter. Use the whisk to prevent lumps.
– This batter should be a fairly thin consistency, thinner than normal dosa batter.
– If you let the batter sit for a little while you will see that it has become thicker. This is because the oats absorb water and get fluffier. Add more water to keep the consistency thin.
– Now add your toppings, namely the onions, green chillies, grated ginger, crushed cumin, coriander leaves, chopped curry leaves, fresh grated coconut and the seasonings, salt & pepper.
– Mix all these together and you’re ready to fry!

Gas Stove:
– If you’re frying on a gas stove you should keep your heat on medium-high.
– Let the pan get hot and then start pouring the batter from the outer edges. It should become harder instantly and should not be spread with the ladle.
– Instead of spreading the batter you should pour more in the gaps, moving from the outer edge inwards until most of the gaps are filled. There may be some very small gaps remaining but those are no problem.
– Pour some oil around the edges to help it lift easily and give a nice golden brown colour.
– After you see that the top has become fully cooked, the dosa lifts easily and is a nice golden brown colour then you can flip it over. Cook it for about a minute or two and then your dosa is ready!
– To make your next dosa ensure you take a clean cloth or paper towel and wipe down the pan.

Induction cooktop:
– If you’re using an electric heat source then this dosa works slightly differently.
– Keep the heat on medium-low.
– Pour oil on the pan first and grease it well.
– Then pour the batter starting first in the middle of the pan and then outwards.
– Since the heat is lower you can spread this batter slightly to give it shape.
– From then on, add oil around the edges normally and watch for the right colour to know when to flip, about 5 minutes per dosa.
– These dosas will not be as crispy as the ones cooked on the gas stove but they will be just as delicious!
– Serve these dosas with Coconut Chutney, our Tangy Green Chutney or Yummy Tomato Chutney! They can also be eaten with curds.
