Tender Buttermilk Waffles with Quick Berry Jam | Breakfast Recipes

Waffles for breakfast that are tender and fluffy seem less sinful with some healthy chia jam sweetened with maple syrup. The jam is a hit on toast too. This is a “concept” recipe and with simple substitutions, it can easily become gluten free. Full Ingredients List below.

Buttermilk Waffles w/Chia Jam:
2 cups all-purpose flour (or Bob’s Red Mill GF 1:1 Flour)
1/4 cup turbinado sugar
1 tablespoon baking powder
1/2 teaspoon kosher salt
1/2 tsp baking soda
1 1/2 cups buttermilk (+ 1/3rd cup or so more if using GF flour)
1 tablespoon vanilla extract
3 large egg whites plus 2 large egg yolks
8 tablespoons (1 stick) salted butter, melted
Powdered sugar & Maple Syrup to Serve

Chia Jam:
4-5 cups frozen or fresh berries
1/4 cup maple syrup or honey (or 1/3rd cup sugar)
1 lemon, zested and juiced
pinch of salt
