Chicken Malai Handi
Serves 5-6

Recipe in English:

Ingredients:
-Simply sufi breast fillets ½ kg
-Safed mirch powder (White pepper powder) 1 tsp
-Adrak lehsan paste (Ginger garlic paste) ½ tbs
-Cream 1 tbs
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Namak (Salt) ½ tsp or to taste
-Hari mirch (Green chili) crushed 1 tbs
-Kacha papita (Raw papaya) paste 2 tbs or Meat tenderizer 1 tbs
-Dahi (Yogurt) 2 tbs
-Lemon juice 2 tbs
-Kashkhash (Poppy seeds) soaked 1 tbs
-Kaju (Cashew nuts) soaked 10-12
-Pani (Water) 1-2 tbs
-Sufi cooking oil 1-2 tbs
-Sufi cooking oil 1 tbs
-Shimla mirch (Capsicum) cubes ½ Cup
-Pyaz (Onion) cubes ½ Cup
-Koyla (Charcoal) for smoke
For Gravy:
-Sufi cooking oil 3 tbs
-Makhan (Butter) 1 & ½ tbs
-Laung (Cloves) 2
-Hari elaichi (Green cardamom) 3
-Pyaz (Onion) grinded 1 large
-Adrak (Ginger) grated ½ tbs
-Hari mirch (Green chili) crushed 1 tbs
-Safed mirch powder (White pepper powder) ½ tsp
-Kali mirch powder (Black pepper powder) ½ tsp
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Namak (Salt) ½ tsp or to taste
-Dahi (Yogurt) whisked ¾ Cup
-Doodh (Milk) ½ Cup as required
-Cream 2 tbs
-Kasoori methi (Dried fenugreek leaves) ½ tsp

Directions:
-Cut chicken fillets into cubes.
-In bowl,add chicken boneless cubes,white pepper powder,ginger garlic paste,cream,cumin seeds,salt green chilies,raw papaya paste,yogurt,lemon juice,mix well and marinate for 2 hours.
-In blender,add cashew nuts,poppy seeds,water and blend well & set aside.
-In grill pan,add sufi cooking oil and marinated chicken,grill until done & set aside.
-In the same grill pan,add sufi cooking oil,capsicum,onion and grill for 1 minute & set aside.
-Give a charcoal smoke for 2 minutes & set aside.
-In wok,add sufi cooking oil,butter and let it melt.
-Add cloves,green cardamom and mix.
-Add grinded onion,mix well and cook for 4-5 minutes.
-Add ginger,green chilies,cashew+poppy seeds paste,mix well and cook for 2-3 minutes.
-Add white pepper powder,black pepper powder,cumin seeds,salt and mix well.
-Add yogurt and mix well for 2-3 minutes.
-Add milk and mix well.
-Add cream and mix well.
-Now add grilled chicken & vegetables and mix well.
-Add dried fenugreek leaves,cover and let it simmer for 2 minutes.
-Add butter & serve!

Directions:
-Chicken fillets ko cubes mein cut ker lein.
-Bowl mein chicken boneless cubes,safed mirch powder,adrak lehsan paste,cream,zeera,namak,hari mirch,kacha papita paste,dahi aur lemon juice dal ker ache tarhan mix karein aur 2 hours kliya marinate ker lein.
-Blender mein kaju,kashkhash aur pani dal ker ache tarhan blend karein & side per rakh dein.
-Grill pan mein sufi cooking oil aur marinated chicken dal ker pak janay tak grill ker lein & side per rakh dein.
-Us he grill pan mein sufi cooking oil,shimla mirch aur pyaz dal ker 1 minute kliya grill karein & side per rakh dein.
-2 minutes kliya koyla ka dhuwan dein & side per rakh dein.
-Karhai meinsufi cooking oil aur makhan dal ker melt ker lein.
-Laung aur hari elaichi dal ker mix karein.
-Grinded pyaz dal ker ache tarhan mix karein aur 4-5 minutes kliya paka lein.
-Adrak,hari mirch,kaju+kashkhash paste dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
-Safed mirch powder,kali mirch powder,zeera aur namak dal ker ache tarhan mix karein.
-Dahi shamil karein aur 2-3 minutes kliya ache tarhan mix ker lein.
-Doodh shamil karein aur ache tarhan mix karein.
-Cream dal ker ache tarhan mix ker lein.
-Ab grilled chicken & vegetables shamil karein aur ache tarhan mix ker lein.
-Kasuri meethi dal ker dhak dein aur 2 minutes kliya dum per rakh dein.
-Makhan dal ker serve karein.
