Chicken Nihari Recipe in English:

Ingredients:
Prepare Nihari Masala:
-Sauf (Fennel seeds) 2 tsp
-Laung (Cloves) 3-4
-Hari elaichi (Green cardamom) 3
-Sabut kali mirch (Black peppercorns) 5-6
-Tez paat (Bay leaf) 1
-Pipli (Long pepper) 2
-Badiyan ka phool (Star arise) 1
-Badi elaichi (Black cardamom) 1
-Kala zeera (Black cumin seeds) ½ tsp
-Jaifil (Nutmeg) ½ piece
-Javatri (Mace) 1 leaf
-Lal mirch powder (Red chili powder) ½ tbs or to taste
-Dhania powder (Coriander powder) ½ tbs
-Sonth powder (Dried ginger power) 1 tsp
-Haldee powder (Turmeric powder) 1 tsp
-Kashmiri lal mirch (Kashmiri red chili) powder 2 tsp
-Namak (Salt) ½ tsp or to taste
Prepare Nihari:
-Ghee ½ Cup
-Chicken with bones 750 gms
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Pani (Water) 5-6 Cups or as required
-Atta (Wheat flour) ¼ Cup
-Pani (Water) 1 Cup
Prepare Tarri (Chili Oil) (optional):
-Ghee ¼ Cup
-Kashmiri lal mirch (Kashmiri red chili) powder 1 tsp
Assembling:
-Nihari
-Tarri (Chili oil)
-Adrak (Ginger) julienne
-Hara dhania (Fresh coriander)
-Lemon juice

Directions:
Prepare Nihari Masala:
-In spice mixer,add fennel seeds,cloves,green cardamom,black peppercorns,bay leaf,long pepper,star anise,black cardamom,black cumin seeds,nutmeg and mace,grind well and take out in a bowl.
-Add red chili powder,corinader powder,dried ginger powder,turmeric powder,kashmiri red chili powder,salt and mix well.Nihari masala is ready.
Prepare Nihari:
-In pot,add ghee and let it melt,add chicken and mix well until changes color.
-Add ginger garlic paste and mix well.
-Add prepared nihari masala and mix well.
-Add water,mix well and bring it to boil,cover & cook on low flame for 35-40 minutes.
-Dissolve wheat flour in water and mix well.
-Gradually add dissolve flour in nihari and mix well continuously.
-Cover and cook on low flame 6-8 minutes.
Prepare Tarri (Chili Oil) (optional):
-In small frying pan,add ghee and let it melt,add kashmiri red chili powder and mix well for 2 minutes.
-On serving plate,add nihari,tarri (chili oil),ginger,fresh coriander,lemon juice & serve.

Prepare Nihari Masala:
-Spice mixer mein saunf,laung,hari elaichi,sabut kali mirch,tez paat,pipli,badiyan ka phool,badi elaichi, kala zeera,jailfil aur javatri dal ker ache tarhan grind ker lein aur bowl mein nikal lein.
-Lal mirch powder,dhania powder,sonth powder,haldee powder,kashmiri lal mirch powder aur namak dal ker ache tarhan mix ker lein.Nihari masala tayyar hai.
Prepare Nihari:
-Pot mein ghee dal ker melt karein,chicken dal dein aur chicken ka rang tabdeel hunay tak ache tarhan mix ker lein.
-Adrak lehsan paste dal ker ache tarhan mix karein.
-Tayyar nihari masala dal ker ache tarhan mix ker lein.
-Pani dal ker ache tarhan mix karein aur dhak ker halki ancch per 35-40 minutes kliya paka lein.
-Atta mein pani dal ker ache tarhan mix ker lein.
-Thora thora ker ka nihari mein dissolve atta daltay jayein aur musalsal mix kertay rahein.
-Dhak ker halki ancch per 6-8 minute kliya paka lein.
Prepare Tarri (Chili Oil) (optional):
-Chotay frying pan mein ghee dal ker melt karein aur kashmiri lal mirch powder dal ker 2 minutes kliya ache tarhan mix ker lein.
-Serving plate mein nihari,tarri (chili oil)adrak,hara dhania aur lemon juice dal ker serve karein.
