Ready to eat?
Former U.S. Army Ranger Vincent “Rocco” Vargas is sharing some of his favorite recipes with Rated Red. In this episode, he makes a fantastic chicken mole with the help of his niece.
Ingredients: 1¼ pounds boneless, skinless chicken thighs, trimmed; ¼ teaspoon salt, divided; ¼ teaspoon freshly ground pepper; 2 tablespoons canola oil, divided; 3 minced garlic cloves; 1 tablespoon chili powder; ½ teaspoon ground cumin; ½ teaspoon ground cinnamon; 1 8-ounce can tomato sauce; ½ cup reduced-sodium chicken broth; ¼ cup mini semisweet chocolate chips; 1 tablespoon peanut butter; 1 tablespoon toasted sesame seeds
Directions: Heat oil over medium heat. Season chicken with salt and pepper, then cook in oil for 2 minutes on each side until browned and transfer to plate. In the same pan, reduce heat to medium and add remaining oil and salt, garlic, chili powder, cumin and cinnamon; stir. Add tomato sauce, broth, chocolate chips and peanut butter; combine and bring to a simmer. Reduce heat to medium-low; return the chicken and coat in sauce. Simmer for 5 minutes or until cooked through. Serve sprinkled with sesame seeds.
