3 Healthy Vegan HOLIDAY Brunch Recipes for Easy Entertaining

In this episode of Abbey’s Kitchen, Abbey has partnered with the Florida Department of Citrus who have sponsored this video, to share three tasty vegan holiday brunch recipes that feel very festive and indulgent, but are actually super well balanced and nutritious.

Abbey loves using Florida Orange Juice because it’s an excellent source of vitamin C for collagen formation and immunity, which is perfect for cold and flu season! It’s also a good source of potassium and folate for heart health and contains no added sugar, so it’s naturally sweet and refreshing addition to any holiday recipe or spread.

Let’s get cooking!

First up, Abbey is making a citrus fruit salad with orange dressing. In a small bowl, mix ½ cup of Florida Orange Juice, 2 tsp of maple syrup and the seeds from one vanilla bean. Meanwhile, segment a few grapefruit and oranges and serve up on a plate. Add sliced kiwi, pomegranate and crushed pistachios. Drizzle with orange dressing and enjoy!

The second recipe is Orange Cranberry Pancakes with Maple Syrup and Cranberries

In a bowl, combine 2 ¼ cup of whole wheat flour, 2 tsp of baking powder, ½ tsp baking soda, ½ tsp of salt, ½ tsp of cinnamon, 1 ½ cup Florida Orange Juice, 1 tsp of Florida Orange zest and 1/3 cup of dried cranberries. Mix well to remove any clumps. Heat a nonstick pan with coconut oil and cook pancakes.

For garnish, add segmented oranges, dried cranberries and maple syrup. Next, dig in and enjoy!

Abbey’s final recipe is her Orange Cream Chia Pudding. To make the pudding, combine 1 cup of unsweetened almond milk, ½ cup of Florida Orange Juice, the zest of one Florida Orange, 2 tbsp of maple syrup, ¼ cup of chia seeds and 1/3 cup of almond yoghurt. Refrigerate overnight. Top the chia pudding with Florida orange slices, pomegranate arils and toasted almonds.
