5 QUICK & EASY, HEALTHY RECIPES



We’ve always been keen advocates of eating the rainbow. So that was the theme for our lives this week! We cooked up five mouthwatering, quick & easy recipes that are full of colour, and super healthy!

These dishes are bound to put a spring in your step. Give them a go! Your body with thank you.

  • I live in Long Island, NY. Any suggestions on where to find fresh oyster mushrooms. Having enormous trouble finding them. Love you guys!

  • More recipes like these please. My meals are starting to look a bit samey.

  • Breakfast Hash Tacos
    1 red onion
    1tbsp red wine vinegar
    1 pinch salt
    2tbsp olive oil
    4 vegan sausage
    200g mushrooms
    1 clove garlic
    Splash water
    200g baby potatoes cooked
    1tbsp fajita seasoning
    8 cherry toms
    100g spinach
    Blue corn tacos
    Fresh avocado, cherry toms hot sauce, pickled red onions lime juice & cilantro to finish!

    Nasi Goreng
    Paste:
    5cm ginger
    2 shallots
    2 cloves garlic
    2 birds eye chillis
    1 stalk lemongrass/ lemon peel
    1tsp tomato puree
    1/2tsp sesame oil
    1 tsp maple syrup
    2 tbsp water & blend!

    1tbsp oil
    2 shallots
    1 red pepper
    1 large carrot
    200g kale
    1tbsp soy sauce
    250g cooked brown rice
    Coriander, peanuts, chilli, lime juice to finish

    Thai Tempeh Salad
    200g cubed tempeh

    Dressing:
    Juice & zest of 4 limes
    50ml apple juice
    2 tbsp rice vinegar
    1 tbsp soy sauce
    1 tbsp sesame oil
    7cm grated ginger
    2 cloves garlic
    1 or 2 chillies

    1/4 red cabbage
    1 carrot
    10 cherry toms
    50g mangetout
    1/2 cucumber
    2 spring onions
    30g unsalted peanuts

    Lebanese Spiced Stuffed Aubergine
    2 aubergines
    2tbsp harissa paste
    1/2 onion
    Pinch salt
    80g plant based mince
    2tsp cinnamon
    2tsp ground coriander
    2tsp cumin

    Dressing:
    100g tahini
    Juice of 1 lemon
    1tbsp dried mint
    100ml water

    To serve – fresh mint, coriander, fresh chilli, almonds, pomegranate seeds

    Chick’n Caeser Salad
    1tbsp olive oil
    2tbsp chicken seasoning
    300g oyster or mixed mushrooms
    200g wholemeal sourdough bread
    2tbsp olive oil
    1/2 tsp garlic powder
    1tsp Italian herbs

    Dressing:
    60g vegan mayo
    2tbsp nutritional yeast
    1tbsp white wine vinegar
    Juice of 1/2 lemon
    1 clove grated garlic
    Salt & pepper to taste

    ENJOY, EAT THE RAINBOW & KEEP A STRONG IMMUNE SYSTEM BUILT BY PLANTS!!

  • None of these look particularly healthy. Tasty though.
