#1 CHOC GINGERBREAD SMOOTHIE
2 frozen bananas
1/3 cup rolled oats
500ml plant milk
1 tsp cinnamon
1 tsp ginger
1/4 tsp nutmeg
2 medjool dates
#2 RAW FRUIT MINCE PIES
Base:
1/2 cup pecans
1/2 cup rolled oats
1 cup cashews
10 medjool dates
1 tbsp rice malt syrup
Filling:
1/3 cup currants
1/3 cup cranberries
5-6 pieces of dried ginger
1/2 cup raisins
3 medjool dates
1/4 cup apple sauce
1 tsp cinnamon
1 tsp mixed spice
1/4 tsp nutmeg
juice from 1 orange
juice from 1/2 lemon
NOTE: Store in fridge or freezer
CHOCOLATE TRUFFLES:
Truffle:
200g 70% cacao chocolate (vegan friendly)
1/4 cup coconut milk (heated/warmed but not boiling)
Pinch of salt
Coating:
Crushed pretzels
Coconut desiccated
anything you like!!
NOTE: the higher percentage of cacao the more liquid you need otherwise the chocolate will seize up. If you use for example 40% cacao chocolate add the coconut milk 1 tbsp at a time until it’s combined as you may not need as much liquid.
Store in fridge.
FRUIT AND NUT LOAF IN JAR
For the jar:
1 cup spelt flour
1/2 cup buckwheat flour
1 tsp baking powder
1 tsp bicarb soda
2 tsp cinnamon
1 tsp ginger
1 tsp mixed spice
1/2 tsp nutmeg
1/3-1/2 cup unrefined cane sugar or coconut sugar
1/4-1/3 cup of each: coconut shreds, coconut desiccated, cranberries, raisins, pumpkin seeds, walnuts, dates, almond slivers or whatever you desire.
To add – wet ingredients:
2 flax eggs (4 tbsp flax meal + 1/3 cup water combined)
3 tbsp molasses
1/2 cup almond milk
1/3 cup apple sauce (or coconut oil)
1/4 tsp vanilla extract – optional
METHOD:
Preheat oven to 180 degrees celsius
1. Pour jar contents into a mixing bowl, add in the wet ingredients and combine.
2. Add mixture to a loaf tin and bake for 35-40 minutes at 180 degrees celsius.
3. Remove from oven, allow to cool and enjoy.
NOTE: Write the ingredients on a tag and tie to jar
