Easy & Healthy Salad Recipe for Lunch [So Tasty]

Salad Recipe

8 to 10 large leaves of lettuce
2 kale’s leaves
2 celery stalks
1/2 red bell pepper & 1/2 yellow bell pepper
3 cups sliced mushroooms
3 green onions
2 handful raw pumpkin seeds
2 big handful dried raisins
1 cup cooked chickpeas

Cook the mushrooms
Chop the mushrooms and the white part of the green onions. Add them to a small pan with a lil bit of water (about 2 or 3 tablespoon). Cook it at medium heat for about 7 minutes.
When it’s ready, remove from the heat and separate the mushrooms + onions from the juice that came out. Set the juice and the mushrooms aside for later.

Finely chop all the other veggies and add them to a large bowl, as well as the cooked mushrooms, the raisins, the pumpkin seeds and the chickpeas.

Salad dressing

3 + 1/2 tablespoon raw tahini (or any tahini you prefer)
2 tablespoon mustard
4 tablespoon coconut aminos
The juice of 1 large lemon
1 teaspoon curry powder1 teaspoon cayenne pepper (or less if you don’t want it too spicy)
1/4 teaspoon pink hialayan salt (or Dulse flakes to replace salt).
4 tablespoon of the juice that came out of the cooked mushrooms (or you can simply use water instead)

Place all the ingredients into a small bowl and mix it well.

Pour on top of the salad and combine everything together. Enjoy
