So, I’ve been hearing a lot about Turmeric. A fantastic ingredient that despite Indian cuisine and medicine being like… umm, duuuuh it’s amazing… for centuries, has suddenly become all popular! So let’s see what we can do with this magic spice…

SERVES 4 | 20 MINUTES PREP | 30 MINUTES COOKING
2 tbsp extra virgin olive oil
2 tsp chilli powder
2 tsp ground cumin
2 tsp ground coriander
2 tsp turmeric
2 tsp ground black pepper
1 cauliflower, broken into small florets
250ml boiling water
1 tbsp vinegar
Salt
Heat a frying pan over a medium heat and add the oil (or ghee if you have it available). Stir in your spices and fry for 2-3 minutes – release those fragrances! Add the cauliflower and stir to coat the florets with the spice mixture.
Add the water to the pan with the cauliflower. Season to taste with salt. Bring the pan to the boil, then reduce the heat and simmer for 5-6 minutes, or until the cauliflower is tender. Enjoy!
