Smashed Avocado Healthy Burger On A Toast | Simple Healthy Recipes | Julia Snabl

These lighter patties are packed with protein from the eggs and the avocado is a great source of healthy fats.

Ingredients

1 broccoli stalk, rinsed
3 large eggs
I large potato, peeled
2 ripe avocados, peeled
1 tomato, cut into slices
1 cucumber, cut into slices
2 lbs ground beef
1 garlic clove, crushed
Freshly ground black pepper
Salt, to taste
Dried parsley
Dried chives
1 tbsp of sesame seeds
Juice of half a lemon
Water
Plain yogurt, to serve
Whole grain toast, to serve

Directions

1, Preheat the oven to 350 degrees F.
2, Cut the broccoli into small pieces and place in a saucepan filled with water. Cook over medium heat, covered, until a knife goes through if inserted. Strain and transfer to a bowl and place aside.
In another saucepan filled with water, boil the eggs for 6 minutes until cooked through.
3, In another bowl, mix together the ground beef with garlic, pepper, salt, parsley and chives.
4, Grate the potato over the meat mixture and mix to combine. Add one table spoon of water and mix the meat one more time.
Line a baking sheet with aluminium foil and lightly grease with olive oil.
5, Shape the burgers, place them on the lined sheet, leaving some space between each burger.
6, Bake for 20 minutes, flipping half way through the time.
7, Meanwhile, cut the cooked eggs into small pieces and place in a bowl.
8, Cut the avocados into small pieces as well and add to the eggs. Pour in the lemon juice and mix to combine.
9, In a small bowl, mix the yogurt with a pinch of salt, some parsley and black pepper.
10, Take the toast slices and place a round cookie cutter or a glass the same size as the burgers and cut a circle out of each slice.
11, On top of each toast circle layer in this order: burger, tomato slice, cucumber slice, a small dollop of yogurt, 1 broccoli floret.
12, Serve with avocado and eggs salad.

Note: Feel free to use other vegetables in this recipe such as mushrooms. You can cook them and layer them on top of your burger. This recipe is best eaten on the same day.
