Welcome to DAY 17! Today we are making the BEST, most THICK, but also HEALTHY Chocolate Chip Cookies. Now I know this is quite the claim to make, but I have been testing “healthy” cookies for a long time now and a problem I’ve always run into is that they do not taste as advertised.

Most low-calorie cookies don’t taste good. Instead of helping your craving, they only leave you wanting for more. And so this is what inspired me to learn the science of baking. Your body requires adequate nutrition and your baking requires certain ratios and rules to be upheld.

So today we’re using science to elevate the nutrition, without losing the flavor / texture / or ESSENCE of what makes these cookies great!

WHAT YOU NEED:
1 ½ cups all purpose flour

1 ½ cups unflavored pea protein powder

1 tsp baking soda

1 tsp fine salt

2 sticks (1 cup) unsalted butter, at room temperature

1/2 cup white sugar or stevia baking blend

1 1/4 cups brown sugar or brown sugar stevia baking blend

1 tsp vanilla extract

2 large eggs, at room temperature

1 cup milk chocolate chips

1 cup semi-sweet chocolate, chopped

1 cup pecans, chopped & roasted

WHAT TO DO:
1-Preheat the oven to 350ºF. Line a baking sheet with parchment paper.

2-In a large bowl, combine all the dry ingredients.

3-In a separate large bowl, cream together the butter and sugar.

4-Add the vanilla and eggs, mixing until just combined.

5-Gently stir in the flour mixture.

6-Fold in your mix-ins.

7-Portion your cookies out onto the baking sheet.

8-Pop them directly in the oven and bake for 12 to 15 minutes or until golden brown.

Let cool then ENJOY!!!
