Three Healthy GRILLED PIZZA RECIPES | BBQ Chicken, Pear & Walnut Blue Cheese, Cilantro Pesto Pizza

In this episode of Abbey’s Kitchen, Abbey is outside in the backyard loving the summer weather and feeling like it’s the perfect time to bust out the BBQ. Abbey’s got three takes on everybody’s favourite food: pizza.

The key to making your pizza a little bit lighter, is to go with thin crust, flavourful cheeses and load up on lean sources of protein and veggies. Instead of being indoors kneading pizza dough from scratch, Abbey likes to use Flatout thin pizza crusts because they’re low in calories and high in protein and fibre which make them the perfect base for loading up healthy pizzas.

First thing you want to do, is preheat your grill to medium heat. Get your flatouts out of the bag and give it a few sprits of olive oil from an oil atomizer to give it an even coat on top. Lay them flat onto the heat for two minutes. You don’t want to grill them on both sides quite yet because you want to load them up first with toppings before you pop them back on the grill.

The first recipe is a barbecue chicken pizza with pineapple and red onion. Throw down a little barbecue sauce onto the bottom of the toasted flatout and top with leftover chicken, pineapple, red onion, pickled jalapeno and aged cheddar. Pop them back on the grill and cook for a few minutes until the cheese gently starts to melt and the bottom gets crispy.

The second recipe is a pear, walnut and blue cheese pizza. Start by smearing a little ricotta cheese onto the bottom of toasted flatout pizza crust. Top them off with sliced pear and blue cheese. Pop it back on the grill, close the lid, and let the cheese gently melt for about 3-5 minutes until crust gets nice and crispy on the bottom. Finish it off with thyme, fresh toasted walnuts and a drizzle of sweet honey.

The last recipe is a corn cilantro pesto pizza with tomatoes and avocado. First start by grilling a piece of corn on the cob to get some nice char marks before removing the kernels. Next, the pesto. Start by pureeing together cilantro, feta, almonds, garlic and olive oil. Add pesto to pizza crust and top it off with tomatoes, corn, feta and return to grill for three minutes. Garnish with sliced avocado and fresh cilantro.
