WHAT I ATE TODAY [VEGAN + HEALTHY!]



I know that many of us (myself included) have made it our New Year’s resolution to eat better, so I thought it would be appropriate to do a “What I Ate Today” and share some of my favorite healthy (whole-food/vegan) recipes! Eating right becomes easier the moment that you begin to associate it with pleasure. If you have the mentality that you’re punishing yourself you will struggle to stick with it. It’s so important to find pleasure in healthy eating… which means that you have to find healthy recipes that you genuinely enjoy eating! It IS possible and I hope this video helps! Much love! 🙂

RECIPES!
→ strawberry coconut oatmeal: boil steel cut oats in water // after 20-25 minutes, stir in cinnamon and vanilla, plus (optional) ground flax seed and chia seed // cover and remove from heat (allow to cool/thicken) // serve with shredded coconut, sliced almonds and fresh strawberry slices

→ kale white bean soup: in a pan, brown a large onion in a bit of veggie broth, set aside // in a large soup pot, bring 2 cans of diced tomatoes (in tomato juice) to a boil // add a large can of white beans, as well as the browned onion // add water to get the right liquid-to-veggies ratio // add dry barley // add fresh kale, potatoes and carrots // add pepper and seasoned salt // reduce heat and cook on medium-low for 1-2 hours (until base has thickened and potatoes begin to fall apart)

→ garlic hummus + veggies: make hummus (blend: 2 cans of garbanzo beans, fresh garlic, lemon juice, water, cumin, garlic salt and turmeric) // refrigerate hummus for at least 1 hour // serve with veggies of your choice

→ broccoli alfredo pasta: make sauce (in a pan, brown a large onion in a bit of veggie broth // add in garlic, cauliflower and veggie broth, then cook (covered) for 10 minutes // transfer mixture to a blender and blend until smooth // add in cashews, lemon juice, seasoned salt, pepper and nutritional yeast and blend until smooth) // in a pan, steam broccoli // in a pot, boil pasta // mix sauce, pasta and broccoli together

→ “snickers ice cream”: make ice cream (blend frozen/thawed bananas // stir in vanillla) // scoop ice cream into a dish and top with chopped peanuts, a bit of maple syrup and (optional) a few chocolate chips
