Eggplant pockets recipe: a delicious side dish for a quick lunch!

They will be a hit! INGREDIENTS
– 2 eggplant
– 500 g minced meat
– 50 g hard cheese
– 2 onion heads
– 2 cloves of garlic
– 1 carrot
– 2 tbsp breadcrumbs
– 1 tsp salt
– ½ tsp black pepper
– 50 ml of vegetable oil

Fry diced onion and grated carrot. We’ll need it later. Add garlic, salt, black pepper, breadcrumbs and fried onion with carrot. Mix it all together. 
Cut eggplant into oblong slices. Salt them and keep away for about 20min. Then fry them on the pan. 
Put the mixture into eggplant pieces and fold it. On baking tray add some cheese on the top and bake 180°C / 350°F for about 20min.
