Green pepper beef fillet



Hi everybody and welcome back to Cucinaconoi, today I propose you the recipe of the green pepper beef fillet. It’s a famous main course for the kind of meet that it is used to prepare it. At the same time it is very easy to prepare. Let’s see the ingredients we need. For 2 people 2 slices of a beef fillet, of about 150-160 grams, 80 grams of fresh cream, 25 grams of Cognac, half a spoon of brine green pepper, 20 grams of butter, 3-4 spoons of broth and salt. Let’s start the preparation warming the butter up in a pan; to rise the smoke point is essential to use a clarified butter.
Let’s add the fillets in the pan after having tied them with a twine to preserve their shape. After a couple of minutes we add the salt/ and we turn them. Avoid any holes in the meat, otherwise the juice will come out. Let’s add a bit of salt and let it cook for another couple of minutes maintaining a moderate heat. Once the fillet has turned brown, we move it to a plate or a tray and we keep it warm. Then we remove a part of the pan juice / and we remove the grease with some Brandy. / We add the pepper, we let it become tasty and we add the cream. We also add 2 spoons of broth and we bring the sauce to the boil. Meanwhile we remove the twine form the slices of fillet and we put them again in the pan. / We keep cooking for a couple of minutes. At this point our fillet is ready and we can serve it. The green pepper beef fillet goes very well with vegetables or sauté potatoes.
