Veg Manchurian Fried Rice
Ingredients:
• 1 ½ cup chopped cabbage
• 1 small grated carrot
• 1/4th cup chopped capsicum
• ½ inch chopped ginger
• 1 teaspoon salt
• 2 tablespoons refined flour (maida)
• 2 tablespoons cornstarch Oil for deep frying
• 8-10 chopped garlic
• 3-4 chopped green chillies
• 1small chopped onion
• 1/4th cup shredded cabbage
• 1/4th cup julienned carrot
• 1/4th cup julienned capsicum
• 2 tablespoons Ching’s Dark Soy sauce
• ½ tablespoon Ching’s Chilli Vinegar
• 2 tablespoons Ching’s Red Chilli sauce
• 1 teaspoon crushed pepper
• 2 cups water
• 2 cups parboiled rice
Method:
For Manchurian balls:
• To make Manchurian balls, in a bowl add chopped cabbage, carrot, capsicum, ginger and salt. Mix well and keep it aside for 10 minutes.
• Squeeze out the water from the mixture and add refined flour, cornstarch and mix well.
• Make small balls and deep fry it till it becomes brown and crispy. Keep side
For gravy:
• Heat oil in a pan and add garlic, green chillies and stir fry.
• Now add vegetables – onion, cabbage, carrot, capsicum and cook it for 1 minute.
• Now add Ching’s Dark Soy sauce, CHing’s Chilli Vinegar and Ching’s Red Chilli sauce.
• Add pepper, water, rice and fried Manchurian balls.
• Cover and cook until the rice is soft and water dries up.
• Once done, add coriander leaves, spring onion and mix well.
• Remove it to a serving plate and garnish with fried noodles and spring onions.
Serve hot and enjoy!
