What’s so special with this dish is, it’s slow-cooked in herbs & coconut milk for 6-12 hours to achieve a caramelized, fall-off-the-bone meat texture. This West Sumatran dish is savoury, slightly spicy and very rich in flavor, and best served with warm jasmine rice. Let’s get cooking!
Main ingredients:
◦ 1,5 kg Beef meat (preferably shin or something tough. No tenderloin, because it’s going to be cooked for a long time, therefore will soften)
◦ Salt & pepper, to taste
◦ Cooking oil, to taste
◦ 1,5 Litres fresh coconut milk (milked from 3 coconut) OR packaged coconut milk with added water
Spices:
◦ 7 cloves shallot
◦ 5 cloves garlic
◦ 200 gr red chili
Herbs:
◦ 3 turmeric leaf, bruise
◦ 5 kaffir lime, bruise
◦ 10 bay leaf, bruise
◦ 2 lemongrass sticks, bruise
◦ 2 tbs nutmeg powder
