Liven up your salsa game with these three different salsas: Mango Salsa, Salsa Roja, and Salsa Verde.
Mango Salsa:
1 Can Black Beans
1 Can Corn
2 Cups Halved Cherry Tomatoes
1/2 Diced Red Onion
1 Diced Mango
1 Diced Red Pepper
1 Diced Avocado
3 TBSP Olive Oil
1/4 Cup Lime Juice
1 TSP Salt & 1 TSP Pepper
Mix
1/4 Cup Chopped Cilantro
Mix
Salsa Roja:
Add to a lined baking sheet:
4 quartered tomatoes
1/2 Cup chopped onion
1 Halved jalapeno
5 Garlic cloves
3 TBSP Vegetable Oil
Broil for 8 minutes
Blend until coarsely chopped
1/3 cup lime juice
1 TSP Salt
1/2 TSP Sugar
1 Cup Chopped Cilantro
Salsa Verde:
Add to food processor:
3 Cups Tomatillos
2 Chopped Jalapeños
1/4 Cup Chopped Red Onion
Blend until finely chopped
Add:
1/2 TSP Salt
1/2 TSP Sugar
1/4 Cup Chopped Cilantro
