3 EASY VEGAN HOLIDAY RECIPES // Simple + Healthy



[ OPEN FOR RECIPES ] Here are 3 easy and healthy recipes you can make to get you into the holiday spirit! We’re making gingerbread bliss balls, a red and green smoothie, and some cranberry orange bread – yum!

[ VERY MERRY SMOOTHIE ]
// Red Layer:
½ cup Arctic Select frozen cranberries
1 frozen banana
½ cup fresh squeezed orange juice
// Green Layer:
1 ½ frozen bananas
½ cup fresh squeezed orange juice
1 tbsp greens powder (or one large handful of fresh spinach)*
Optional topping: starfruit segment for glass

1. Add the frozen cranberries to a blender or high speed food processor and blitz.
2. Add the remaining ingredients for the red layer, blend well, and set aside.
3. Rise your food processor/blender, then add all of the ingredients for the green layer and blend
4. Layer the red and green layers ** into a glass cup using a small spatula
5. Enjoy!
*If you are using fresh spinach instead of a greens powder, blend the spinach and OJ together first before you add the frozen banana – this will make the color more smooth and less clumpy
** If you aren’t taking a photo for instagram (lol), you could just blend the red layer and the green layer together and make a monotone smoothie…but it may look kind of brown haha

[ GINGERBREAD BLISS BALLS ]
3/4 cup soaked dates*
1 tbsp molasses
1 tsp fresh grated ginger**
1/2 tsp nutmeg
1 tsp cinnamon
3/4 cup rolled oats
1/4 cup chopped almonds

1. Unless you dates are super soft, pit them and soak in warm water for ~10 min. Drain
2. Combine the dates, molasses, and spices into a food processor and blend to make an even paste
3. Add the almonds and rolled oats and pulse until combined
4. Roll into balls (I used a tbsp) and store in the fridge for up to 1 week
*If you don’t have dates, you can really use any dried fruit you have on hand, but keep in mind this will alter the overall taste of the balls
**You can substitute this for ½ tsp of ground dry ginger if you do not have fresh

[ CRANBERRY ORANGE BREAD ]
1.5 cups oats, ground into flour
2 tbsp tapioca starch*
3 tbsp coconut sugar, or any sugar of choice
¼ tsp salt
1 tsp baking powder
1 flax egg (1 tbsp flax + 3 tbsp water)
⅓ cup unsweetened applesauce
¾ cup fresh squeezed orange juice**
1 tsp grated orange zest
½ tsp vanilla extract
1 tbsp apple cider vinegar
2 tbsp almond butter (or other neutral nut butter of choice)
½ cup fresh or frozen cranberries
Optional: Buckinis to sprinkle on top

1. Preheat oven to 375 F
2. In a small bowl, prepare your flax egg by mixing 1 tbsp flax with 3 tbsp water. Mix well and set aside.
3. In a medium bowl, add the oat flour, tapioca starch, baking powder, coconut sugar, and salt. Stir well.
4. In a large bowl, combine the applesauce, orange juice, orange zest, vanilla extract, ACV, and almond butter. Mix well.
5. Slowly add the dry ingredients to the wet ingredients and stir until no clumps of the dry mix remain
6. Fold in the frozen cranberries (you may want to set a few aside so you can top the bread with them)
7. Pour the batter into a greased or parchment paper-lined loaf pan. Top with optional cranberries and buckinis
8. Bake for 45-50 min, or until a toothpick comes cleanly out of the center
9. Let sit in pan for 10 min, then remove from parchment paper and place on a baking rack. Let cool.
10. Slice and enjoy! Or just eat the entire thing in one sitting like a loaf of bread…you do you 😉
*I have only made the recipe with the tapioca starch and cannot guarantee any substitutions
**You can use store-bought OJ if you must, but fresh will really make this taste so much better!
