Sandwich Masala Recipe
Cumin seeds – 1/4 cup
Fennel seeds – 2tsp
Cinnamon/ dalchini- 1 stick
Cloves- 1 tsp
Black Salt-2tsp
Chaat Masala- optional- 1 tsp
Peppercorns/ kali mirch- 1tsp
Dry Mango Powder/ Amchoor Powder- 1 tsp
Store in airtight container. Don’t use wet spoon to take out .
Sandwich Chutney / Sandwich Spread
Cilantro- 1 bunch
Mint leaves- 1/2 bunch
Peanuts- 1/4 cup
Oil- 1.5 tsp
Green chillies- 2
green mango small- 1
black salt- 1/2 tsp
table salt- 1/2 tsp ( as per your taste)
First Sandwich- Yogurt Sandwich
Take hung yogurt ( take a muslin cloth and put the curd into it and hang it so that it leaves extra water )
Take veggies of your choice- I have taken purple cabbage, bell pepper, ginger, carrots and corn
Chop them finely
Mix them in the curd and add sandwich Masala that we prepared
Use this as a stuffing for sandwich and toast the sandwich in a griller or on a pan. I have used some sesame seeds to add more flavor
Second Sandwich- Masala Chilly Cheese Sandwich
Take finely chopped bell peppers, fresh grated paneer ( cottage cheese) , finely chopped red onions, finely chopped ginger. Mix them in a bowl. Add Green chutney and Sandwich Masala to it . The stuffing is now ready
Take 3 slices and put a little butter and chutney on these slices.
On the first slice put the stuffing. Cover it with the second slice . On top of the second slice put slices of tomato and cucumber ( its optional).
Finally put the third slice. Grill the sandwich with little butter
Third Sandwich- Bread Dhokla Sandwich
For preparing Batter
1 cup Gramflour/ Besan ( Chickpea flour)
1 TBSp semolina ( sooji)
1.5 tsp- lemon juice
1tsp- Eno fruit salt
1tbsp- crushed ginger and green chilly paste
1/4 cup – yogurt/ curd
3/4 cup water
1/2 tsp- turmeric
1/2 tsp salt ( or as per taste)
1 tsp- oil
prepare the batter without adding Eno fruit salt. Only add fruit salt once you are almost ready to put the sandwich in steamer .
For the stuffing take your choice of veggies. I have taken bell peppers, carrots, cabbage, corn, onions . Take a pot , put some oil and add mustard seeds and cumin seed. Once the seeds crackle add the veggies. Add salt, paprika , chat masala and 1 tsp tomato ketchup. Let the veggies cook for a while. Dont make them too mushy.
Now take bread slices and with the help of cookie cutter cut the bread into round pieces. Take the idli stand, grease it, put the bread slices, put the stuffing on top of it. Now add the eno fruit salt to the batter. Give it a good stir ( not too much) .Add the batter now on top of the veggie stuffing.
Steam it for about 10 minutes and take it out
For the Tampering
2 tbsp -oil
10- curry leaves
1/2 tsp – mustard seeds
4 green chillies- slit lengthwise and cut into half
1pinch- asfoetida
Cut the sandwich into half and put the tampering and garnish it with grated coconut.
