RECIPE ONE // easy pita pizzas
– 6 whole-wheat pitas
– trader joes’ cashew basil pesto or alternative
– toppings of your choice: bell pepper, olives, spinach, pepperoncini, corn, etc.
– cheese or vegan cheese if you please

RECIPE TWO // bbq pulled jackfruit tacos
– 2 (14-ounce) cans jackfruit in brine, drained and rinsed
– 2 tablespoons extra virgin olive oil
– 1 small yellow onion, finely chopped (about 1 1/2 cups)
– 2 cloves minced garlic
– 1 jalapeño, seeded and finely chopped (optional)
– 3/4 cup barbecue sauce, store-bought or homemade
– 2 teaspoons ground cumin
– 1 teaspoon dried oregano
– 1 teaspoon ground coriander
– 1/2 teaspoon smoked paprika
– 1/2 teaspoon kosher salt
– 1 teaspoon grated orange zest
– 10 to 12 (6-inch) corn tortillas
toppings:
– 1 ripe avocado, thinly sliced
– 4 radishes, thinly sliced
– 1/3 cup cilantro leaves, roughly chopped
– 1/3 cup shredded red cabbage
– 1/3 cup corn kernels, canned or fresh from the cob

RECIPE THREE // sticky sesame ginger stir fry
– jasmine rice or alternative
– 1 tsp oil
– 12 to 14 oz (340.2 g) firm tofu
– 2 tsp sesame oil
– 1/2 (0.5 ) large red bell pepper thinly sliced
– 1/2 (0.5 ) or 1 large green bell pepper thinly sliced
– 1 hot chile green (Serrano) or red(birds eye)
– 1/2 cup (64 g) sliced carrots
– 1/2 to 1 cup (91 g) other veggies of choice
– 5 cloves of garlic finely chopped
– 1 tbsp minced ginger peel ginger and mince
– 1/3 cup (77.33 ml) soy sauce or tamari
– 1/4 cup (80.5 g) maple syrup
– 2 to 3 tbsp rice vinegar
– 2 to 3 tsp sriracha
– 1 tbsp orange juice optional
– a generous dash of black pepper
– 1/4 tsp (0.25 tsp) salt
– 1 tbsp cornstarch or use arrowroot starch
– 1/4 to 1/2 cup (62.5 ml) water
– cilantro for garnish
– 1 tbsp toasted sesame seeds for garnish,
