EASY VEGAN THANKSGIVING RECIPES + WHAT I ATE

recipes:

cranberry sauce
1 bag of cranberries
1 orange
1 inch of raw peeled ginger
1/3 cup coconut sugar
opt: chopped walnuts or pecans
blend in food processor on high until desired consistency

cinnamon yams
3-4 yams sliced
drizzle in 1/2 can of orange juice
sprinkle in cinnamon
bake for 1 hour at 350 F

vegan pumpkin pie
preheat oven to 450 F
crust:
1 cup all purpose flour
1/2 cup crisco
1/4 cup water
1/8 teaspoon salt
combine in a mixing bowl and mold to a pie pan
pie:
1 (10.5 ounce) package silken tofu, drained
1 (16 ounce) can pumpkin puree
1 cup coconut sugar
1 teaspoon ground cinnamon
1/8 teaspoon cloves
1 teaspoon pumpkin pie spice
pour pie mixture into crust and bake for 15 minutes at 450 F, then 40 at 350 F
top with soy whip. this is non negotiable.
