Today I have a super quick and easy lunch option that will help you use up some things you may have in your fridge to make a fantastic meal. Oven baked nachos are a great way to use up leftover meats and throw in some beans, top with chopped onion, tomato and avocado if you like and you are on your way to a delicious and satisfying lunch that everyone is going to love.
This day I used some of the “On the Border” tortilla chips that we picked up on our last trip to Sam’s club and layered them in the bottom of a quarter sheet pan. Then I tossed on some leftover beef tenderloin and grilled chicken breast from my Mother’s day dinner that we had left over. I just cut up the meat into manageable bites. then I scattered over a bit of cheddar cheese and topped it off with some home canned black beans. You can use pinto beans or even cold refried beans if that is what you prefer. Then I layered it all up again.
The nachos were popped into a 350 degree oven and baked for about 10 minutes or until the cheese was melted and the chips were browned just a bit. Heating the chips really helps to bring out their flavor and makes them taste even more like the chips you get when you go to the Mexican restaurant!
When the nachos came out of the oven I topped them with a sprinkle of raw onion, but only on half because Rick does not like them. Then drizzled over a healthy amount of homemade salsa and dolloped sour cream on top. I would have added chopped fresh tomato and avocado but I didn’t have any on hand today so we used what we had. You can add what you like on your nachos. How about sliced, pickled jalapeno or sliced ripe olives? Those would be great too! A dash of hot sauce also always adds a nice touch!
There was enough here for all four of us to enjoy a quick lunch using what we already had on hand. This pan of nachos would have easily cost $9 at my local Mexican joint. So the savings is there as well. We used up some leftovers and had a great lunch that everyone enjoyed!
