VEGAN BREAKFAST RECIPES / BREAKFAST IDEAS. Healthy breakfast ideas that are quick, easy and 100% vegan!

EASY VEGAN BREAKFAST RECIPES:

BANANA ICE CREAM:
1. Chop up ripe bananas into chunks and freeze.
2. Put frozen banana pieces into a food processor or powerful blender and pulse until they form ice cream consistency. Sometimes it helps to let the bananas thaw out for a little first or add a little bit of plant based milk.
3. Add cacao powder and pulse again (this is optional to make it chocolatey, but you can add whatever you want to flavour it)
4. Top with your favourite things. I used strawberries, cacao nibs, desiccated coconut and choc shot.

BAKED OATS:
1. Preheat the oven to around 200-220 degrees C
2. Add 1 tablespoon of chia seeds and half a cup of plant milk to a bowl and mix then set aside.
3. In a separate bowl add 1 cup of oats, 1/2 plant milk, 1/4 cup of water, walnuts, dates, banana, blueberries, desiccated coconut, 1/2 teaspoon of baking powder and cinnamon then mix together.
4. Add the chia seeds and milk to the bowl and mix again.
5. Transfer the mix to a baking dish and top with more banana and blueberries.
6. Put in the oven for around 30 minutes (half way through, put foil over the dish so the top doesn’t burn).

TOFU SCRAMBLE:
1. Add crumbled tofu to a pan and fry for a few minutes.
2. Add whatever vegetables you like and fry for a few more minutes. I used mushroom, onion and tomatoes.
3. Add tumeric powder, black pepper, tamari and nutritional yeast.
4. Either serve with toast or in a wrap as a breakfast burrito.
