5 EPIC VEGAN SALAD RECIPES YOU NEED TO TRY! Part 2

Hey! Welcome to day 2 of my week-long “Vegan Salads That Don’t Suck” recipe series! Recipe starts at exactly: 1:01. Today I’m showing you how to make this high protein lentil and quinoa salad with a oil-free vegan pesto dressing that is dairy-free, gluten-free, and incredibly flavorful 🙂 Hope you love it! Full recipe below.

Vegan Pesto Sauce/Dressing

1 large handful of Italian flat-leaf parsley (about 1 cup)
10-12 large, or 15 small, basil leaves
1 large clove of garlic
1 cup white beans, rinsed and drained
1/2 of an avocado
1/4 cup water
the juice of half of a lemon
salt + pepper to taste (be generous with both)

Blend until smooth and enjoy as a salad dressing, sandwich spread, or baked potato topping 🙂

Vegan Pesto Lentil + Quinoa Salad

1 cup cooked quinoa
1/2 cup cooked lentils
1/2 small zucchini, sliced
3 cups baby spinach, chopped
1 inch block of extra firm tofu, diced
small handful of roasted pine nuts
1 serving of vegan pesto sauce (listed above)
fresh parsley, lemon juice, and red pepper flakes to garnish

Combine veggies, quinoa, lentils, tofu, and pine nuts on a plate or in a bowl, top with pesto, and finish with a squeeze of lemon juice, red pepper flakes, and a touch of fresh parsley if desired.

Serve warm or cold and enjoy 🙂

Keep in mind:

1. These are not strict portions, use more or less quinoa, lentils, veggies, or tofu if you like 🙂

2. Quinoa is an amazing source of protein and contains all of the essential amino acids. So does tofu. Lentils and beans are also a good source of iron, protein, and fiber so with all of these hearty, nutrient-dense ingredients on one plate you’re bound to feel full, energized, and satisfied. Because of this, I think this is a great recipe to point out to anyone who is concerned “where vegans get their protein” 😉
