Kristie’s Napa Valley Chicken-Free Salad Recipe:
♦️ 1 9-ounce package chicken-free strips, like Beyond Meat Lightly Seasoned Strips or Tofurky Slow Roasted Chick’n, diced into small pieces
♦️ 1/2 cup vegan mayo
♦️ 1/2 cup halved seedless red grapes
♦️ 1 celery stalk, diced
♦️ 1/4 cup walnuts, chopped
♦️ 2 tablespoons finely chopped green onions or chives
♦️ 1 teaspoon poppy seeds
♦️ 1/2 teaspoon black pepper
♦️ 1 teaspoon dried parsley
♦️ 1/2 teaspoon salt
♦️ 1 tablespoon white vinegar
Instructions: Toss together all ingredients in a large bowl and stir until combined well. Best chilled for at least an hour. To serve, layer your favorite sandwich bread with lettuce and chicken-free salad or serve on a bed of greens.
