Today I want to share with you a delicious potato salad recipe that is inspired by a local restaurant where I live called Carolina Bagel. It is a little hole in the wall place that serves breakfast and lunch and has some amazing home baked bagels, made on premises. We recently enjoyed lunch there as a family after Molly’s college graduation. Both Rick and my dad ordered the potato salad which was out of this world and inspired me to make this version. I think I came very close and think it was delicious!
I started by pressure cooking my baby red potatoes. Pressure cooking or steaming the potatoes gives them a super creamy texture. When you boil the potatoes for salad, you end up leaching all the nutrients into the cooking water and water logging the potatoes. When you pressure cook or steam them the texture is creamy and rich and you retain the majority of the nutrients the potatoes provide.
I allowed the potatoes to cool a bit because I like to start with slightly warm potatoes for a salad. This allows the dressing to be absorbed and permeate the potatoes with delicious flavor. I built my dressing using mayonnaise, sour cream dried parsley and my homemade version of crazy salt, super savory salt. If you like, you can add fresh parsley in place of the dried and you can also bump up the dill in this. Rick is not a huge fan of Dill so we kept that just to the dill in the salt blend. I also would recommend tossing in some fresh chives which I think would be delicious. But, again, Rick is not a fan. So we have to make the family happy and you should too. Adjust this to your own taste preferences.

I added 5 chopped, hard boiled eggs along with a cup of diced celery and the dressing to the warm potatoes and tossed everything to coat. We at this right away and so can you. It was delicious. It was great the next day after having been refrigerated overnight. You may end up needing a bit more salt.
We really enjoyed this potato salad and will continue to make this in the future. This recipe is sort of a kick of for a series of summer picnic salads that want to present. I plan on doing re shoots of my homemade Amish style macaroni salad, coleslaw and others that are perfect for taking to share for all your summer picnics, barbecues and potlucks. This one is definitely a winner!
