If I had to pick one food that is always on my grocery list, I would probably choose eggs. I’m not alone either. The average person consumed 276 eggs per year! May is National Egg Month and I’m partnering with the American Egg board to share my favorite Green Goddess Egg Salad recipe.
I eat eggs for breakfast, lunch and dinner because they are a nutritional powerhouse. One large egg has 6 grams of high-quality protein and nine essential amino acids for just 70 calories.
You will need:
4 Eggs, chopped
2 tbsp Parsley, chopped
1 tbsp Chives, chopped
1 stalk Celery, chopped
1 tbsp Lemon Juice
1 tsp dijon mustard
salt and pepper to taste
1/2 Avocado, mashed
