Salmon & Quinoa Salad Recipe – Запеченный лосось под соусом песто

How to make healthy dinner or lunch: Pesto Salmon and Quinoa salad recipe at home. This salmon and quinoa salad is the perfect combination for a pre-made lunch, a meal on the go as a side dish or a main meal. Quinoa is a great alternative to couscous or rice and makes a really healthy summer salad. It’s light and packed full of herbs and lemon goes perfectly with fish. It seems everyone is talking about, and cooking, Quinoa these days. I love quinoa because is a versatile ingredient that serves as an excellent base for a variety of healthy and satisfying meals. It is very easy and quick to prepare, and has a delicious nutty flavor with a light and fluffy texture. Salmon is full of Omega 3 and healthy fats.

For this baked salmon and quinoa salad we will need:
2 salmon fillets
2-3 tsp of basil pesto
2-3 tsp of breadcrumbs
Lemon zest from and 1/2 lemon juice from 1 lemon
Salt & Pepper
Parmesan cheese ( optional)

For quinoa salad:
50 gr of quinoa
1 onion
2 cloves of garlic
vegetable stock
spinach/romaine lettuce
cherry tomatoes

Directions:
Step 1: Preheat your oven to 180 C or 350 F.
Step 2: Mix pesto, breadcrumbs, lemon zest and juice in a small bowl.
Step 3: Prepare a small baking dish and place your salmon fillets. Add the pesto sauce on top of each salmon fillet and season with salt and pepper and add some parmesan cheese if you wish. For medium salmon cook in the oven for 7-10 min, if you like your salmon well done cook for 10-15 min.
Step 4: While your salmon is cooking, fry your onion with garlic until soft and brown.
Step 5: Place quinoa into a small pan with water and stock, and let it reach boiling point, then lower the heat and cook on low heat until it puffs up. After its cooked, add your onion with garlic and season well.
Step 6: Serve your salmon on top of quinoa and garnish with some fresh salad. Enjoy!

Лосось запеченный в духовке и поданый с соусом песто, превратит ужин в настоящий праздник. Такое блюдо готовится быстро, а его вкус просто великолепный. Прекрасная комбинация! Рыбка запеченная с ароматным соусом песто, просто, но очень вкусно. Рекомендую.

Для этого нам понадобится:
– 2 филе лосося
– 2-3 чайные ложки песто из базилика
– 2-3 чайные ложки панировочных сухарей
– Лимонную цедру от и 1/2 лимона сокa из 1 лимона
– Соль Перец

Для лебеда салата:
– 50gr лебеда
– 1 луковица
– 2 зубчика чеснока
– 1 овощной бульон
– шпинат / салат
– помидоры черри
