Summer Salads 3 Ways
Serves- 1-2
Ingredients –
Salad 1
1 Cucumber
1 Onion
1 bundle spring onion
1 cup Curd
1 tsp onion seeds
1 tsp black pepper
1 tsp black salt
Salad 2
1 cup french beans
1 tomato
1 cup coriander
½ cup extra virgin olive oil
1 tsp onion seeds
1 lemon juice
Black salt, to sprinkle
Salad 3
1 carrot, shredded
½ cup green peas
1 cup peanuts roasted
¼ cup lemon juice
1 tsp black pepper
1 tsp black salt
Method –
Salad 1
In a bowl add cubed cucumber, onion and spring onion.
Mix together curd, onion seeds, black pepper and black salt.
Pour this in with the vegetables, mix well and serve.
Salad 2
Place together the beans, tomato, and coriander in a large bowl.
In a separate bowl mix extra virgin olive oil, onion seeds and lemon juice.
Pour this mix with the beans and tomato, mix well.
Serve with a sprinkle of black salt.
Salad 3
Mix the shredded carrots, peas and roasted peanuts in a bowl.
To that add a mix of lemon juice, black pepper and black salt.
Mix all of it together, and serve.
