Salad dressing recipe:
– 1 cup soaked cashews
– 1 small size zucchini
– 5 Tbsp lemon juice
– 6 Tbsp coconut aminos
– 2 cloves of garlic
– 1/6 of a large white onion
– 1 Tsp Dijon mustard
– 2 Tbsp Raw Agave ( or any other natural sweetener)
– 1/4 Tsp Pink Himalayan salt (or any other salt you prefer)
– 1/2 Tsp Cayenne powder
– 1 Tsp Curry Powder
– 1/2 Tsp Mexican seasoning powder (optional)
– 4 Tbsp water
Place all the ingredients into a blender and blend until smooth!
Kale salad recipe:
– 1 cup finely chopped Kale (about 3 kale’s leaves)
– 1/2 cup shredded cauliflower
– 3/4 cup shredded carrots
– 1/2 cup shredded beet
– 1/3 red bell pepper + 1/4 yellow bell pepper, finely chopped
– 3 small green onions finely chopped
– 9 dried apricots chopped ( You can also use dried raisins or cranberries)
Place all the ingredients in a large bowl and pour the dressing on top! Enjoy
