Ingredients: serves 4
2 cups couscous
1 tsp cumin
1 tsp paprika
1/4 tsp salt
1 large red onion, diced
1 cucumber, diced
2 Tomatoes, diced
1 red chilli, chopped
1/2 cup fresh mint, chopped
1/2 cup fresh coriander, chopped
1/4 cup tomato puree
2 tbls olive oil
1 lemon
