How to Make Surati Undhiyu & Shrikhand | Tasty Indian Vegetarian Recipes

Undhiyu is a Gujarati mixed vegetable dish that usually made during the winter. The name of this dish comes from the Gujarati words “matlu” meaning earthen pot and “undhu” meaning upside down as traditionally Undhiyu is cooked upside down underground, in earthen pots fired from above the ground.

Ingredients Required For Undhiyu:
– Surti Papdi
– Small Eggplants/ Small Baingan
– Purple Yam/ Lal Surti Kand
– Lilva Beans
– Tuwar Beans
– Potatoes
– Ripe Bananas
– Sweet Potatoes
– Coriander
– Green Garlic
– Green Chillies
– Coconut
– Lime Juice
– Sugar
– Green Peas
– Ginger
– Salt
– Oil
– Ajwain
– Asafoetida
– Water
– Muthiya

Shrikhand is an Indian Dessert made from Hung Curd. It is one of the main desserts in both Gujarati and Maharashtrian households.There are various types of Shrikhand available. Some of the more traditional flavours added to Shrikhand are Kesar/Saffron or Cardamom/Elaichi.

Ingredients Required For Shrikhand:
– Hung Yogurt
– Powdered Sugar
– Cardamom Powder/ Finely crushed green cardamom/ elaichi)
– Saffron/Kesar
– Warm Milk
– Pistachios
