This recipe was one of my original posts on Impatient Foodie and was inspired by a savory vegetarian galette I found in an issue of America’s Test Kitchen. I had forgotten about it, but it came back to mind when I decided to go vegetarian. Finding simple vegetarian recipes that can be made at home in a short amount of time has proven somewhat challenging for me. Pasta was the go-to for awhile, but that became too much of a good thing. This farmers market galette is a new favorite because it requires minimal prep, makes use of a lot of fresh vegetables, and – the best part – is baked with delicious, brie cheese.This savory galette also gets an A+ from me because it’s very versatile. You can sub in whatever kinds of mushrooms when cremini are not available at the Farmers Market, or you can replace the shallots with onions, or swap out the spinach for a different green, like chopped kale or chopped chard. Also, if you have left over chicken stock in your fridge, you can use that instead of the vegetable stock. This is a simple vegetarian recipe that looks like it took a lot of time (and skill) to make, but it doesn’t. Between prep and baking, this can be on the table in 30 minutes. The galette is fun, fast, and easy to make and minimal clean up – Yay! I like to serve it with a simple green salad, or soup if it’s chilly outside. Enjoy!
