Tangy Tofu Lime Curry Recipe (Asian Vegetarian Curry Recipe)
Welcome to Xiao’s Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at a early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.
Tangy Tofu Lime Curry
Ingredients:
400g Tofu
2 Tbsp Red Curry Paste
3 Tbsp Peanut Oil
10g Ginger
1 Red Pepper
300g Courgette
3 Tbsp Lime Juice
15g Basil
2 Tbsp Maple Syrup
3 Tbsp Light Soy Sauce
400g Coconut Milk
Salt To Taste
Method:
1. Finely chop the ginger and basil
2. Cut tofu into bite size pieces
3. Cut courgette into bite size cubes
4. Chop pepper into bite size pieces
5. Heat 2 Tbsp of the peanut oil in the wok on medium heat
6. Place tofu into the wok, fry till golden, remove tofu from wok
7. Place the courgette and pepper into the wok, stir fry for 2 minutes and then remove from wok
8. Heat remaining peanut oil in the wok
9. Place the curry paste and ginger into the wok, fry for few seconds
10.Add soy sauce, lime juice, maple syrup and stir
11.Add tofu and coconut milk, simmer for 2 minutes
12.Add the pepper, courgette and pinch of salt cook for a minute
13.Add basil and stir
14.Transfer into a dish and serve with rice
