RECIPES
CHOCOLATE CHIP COOKIES
Ingredients:
2 Cups of Flour
1 1/2 Teaspoons of Baking Powder
1/4 Teaspoon of Baking Soda
1/2 Teaspoon of Salt
1 1/3 Cups of Brown Sugar
1/2 Cup of Coconut Oil
6 Tablespoons of Water
1/3 Cup of Vegan Butter
2 Teaspoons of Vanilla
Steps:
1. Whisk flour, baking powder, baking soda, and salt together in a bowl. Mix Together sugar, coconut oil, water, butter, and vanilla until well combined and smooth. Stir in flour mixture until just combined.
Fold in Chocolate Chips.
2. Place cookie dough in refrigerator for about 1 hour (up to 24 hours)
Let sit in room temperature for about 10 minutes before portioning.
3. Adjust oven rack to middle position and pre-heat oven to 350 degrees Fahrenheit. Coat cookie sheet in non-stick baking spray (I use coconut oil spray) Scoop about 3 tablespoons of cookie dough for each cookie. Arrange cookies to be around 2 inches apart.
4. Bake one sheet at a time. Around 12-14 miuntes or until edges are lightly golden. Let cookies cool then serve.
PEANUT BUTTER COOKIES
Ingredients:
1 1/2 Cups of Flour
1 Teaspoon of Baking Soda
1/2 Teaspoon of Salt
1 1/4 Cups of Peanut Butter
1 Cup of Brown Sugar
1/2 Cup of Corn Syrup
1/4 Cup of Coconut Oil
3 Tablespoons of Water
1 Teaspoon of Vanilla
Steps:
1. Whisk flour, baking soda, and salt together in a bowl. In a different bowl (or stand mixer) mix together peanut butter, sugar, corn syrup, coconut oil, water, and vanilla until well combined and smooth. Stir in flour mixture until just combined.
2. Place cookie dough in refrigerator for about 1 hour (up to 24 hours)
Let sit in room temperature for about 10 minutes before portioning.
3. Adjust oven rack to middle position and pre-heat oven to 350 degrees Fahrenheit. Coat cookie sheet in non-stick baking spray (I use coconut oil spray) Scoop about 2 tablespoons of cookie dough for each cookie. Spray bottom of drinking glass with non-stick spray and press dough. Sprinkle with brown sugar.
4. Bake one sheet at a time. Around 12-14 miuntes or until edges are lightly golden. Let cookies cool then serve.
