COCONUT CURRY RECIPE
Recipe serves 4-6 people
Cook 4 cups of rice
Cook 2 cups of red lentils
For the veggie curry: Sauté 6 cloves of garlic and 1/2 a diced onion in a large sauce pan with a splash of coconut milk (canned or fresh) and about 1 tbsp of VEGAN curry paste on medium heat. Cook for 5 minutes or so then add in a bunch of chopped veggies-in this video we did 1 big cauliflower (chopped), 1/2 pound of mushrooms (diced) and 1 large zucchini (diced.) as well as about 48 ounces of coconut milk. Add in the spices- 2 tsp curry powder, 2 tsp cumin, 1 tsp black pepper and 1/4 tsp of sea salt (or more based on your preference) and simmer for about 30 minutes.
Once everything is cooked, combine all ingredients and top with desired toppings-like chili flakes, lime juice, or siracha. I also love to add diced tomatoes on top too!
