Vegetarian Breakfast Burrito Recipe

Vegetarian Breakfast Burrito Recipe

Makes 5 burritos – use 2 eggs per burrito to make different quantities

Ingredients:

10 eggs
5 large flour tortillas
2 tablespoons olive oil
1 cup shredded sharp cheddar
1 cup shredded monterey jack
10 slices American cheese
3 sweet peppers sliced
1 small white onion sliced
1/2 cup chunky salsa
Cracked black pepper
Dash salt
Dash red pepper
Cooking spray

Preparation:

1. Saute sweet peppers and onion in olive oil
2. Add salt and red pepper
3. Add cracked pepper and salt to 10 eggs, scramble and add to peppers and onions
4. Add salsa
5. Cook until eggs are just done
6. Spread cheeses on tortilla
7. Microwave for 1 minute
8. Fold tortilla and fry on skillet with cooking spray until golden brown each side
