Ingredients (Serves 4 | Prep time: 25m Cooking time: 45m | 404 calories & 14g fat p/serving):
– 1 Eggplant (aubergine)
– 1 Zucchini (courgette)
– 1 Pepper
– 1 Head of Broccoli
– Olive Oil (to fry/bake)
– 1 Onion
– 2 Garlic Cloves
– 1 Tin Chopped Tomatoes
– 1 tbsp Oregano
– 1 tbsp Tomato Puree
– 10-15 Pasta Sheets
– White Sauce (made from 300ml of milk)
– 50g Grated Cheddar Cheese
