Breakfast: Overnight Oats
– 3/4 cup oats
– 1/4 cup chia seeds
– 1 heaped tbsp vanilla bean COYO (*)
– 1 cup cashew mylk
– 1 tbsp rice malt syrup
Toppings:
– 2 tbsp peanut butter
– 3 fresh strawberries
– choc granola

Lunch: Pizza
– GF Vegan pizza base
– 1/2 tin crushed tomatoes
– 2 cloves garlic, chopped finely
– 3 basil leaves
– small bunch of asparagus, chopped
– 1/4 jar of sundried tomatoes
– 1/2 bunch broccolini
– vegan cheese (as desired)
– salt, pepper and olive oil (as desired)
– rocket to serve (fresh)

Dinner: Tempeh Tacos
– 1/2 packet adzuki bean and buckwheat tempeh
– 1/2 bunch broccolini
– 3 x corn tortillas, lightly toasted
– fresh rocket (as desired)
– guacamole (1 avo + 1 lime)
– served with coriander and lime
